Caribou Chili

This recipe was created during the 25 years I lived in Unalaska/Dutch Harbor and relies heavily on canned goods. Sometimes I’ll substitute fresh or frozen for canned ingredients or include corn or leftover steak (my wife Karla likes to add garbanzo beans), depending on what’s on hand and how much room’s in the crock pot.


2 pounds ground caribou (or other wild game)
1 chopped onion
4 lg. cloves of garlic, diced
2 lg. can kidney beans, drained
1 can olives (whole or sliced), drained
2 cans sliced mushrooms, drained
2 cans chopped stewed tomatoes
1 small can tomato paste
1 Tbs. Spike all purpose seasoning (or salt/pepper to taste)
1 tsp ground cumin
1/4 – 1/3 c. chili powder
Approx. 1 c. water

Makes 8+ servings

Brown burger with onions and garlic then add to 6-qt crock pot. Add beans, olives, mushrooms, tomatoes, and seasoning then just enough water to cover. Cook 1-4 hours (longer the better), bake some cornbread, invite your friends and enjoy!
