Gameburger Spaghetti

Venison spagetti sauce, with pasta.

This recipe works well with venison, caribou or moose – any of the wild game found in April wrapped in white paper in the freezer with the word “burger” scrawled on it.

1 -2 lbs. ground meat
2 tablespoons oil
1 onion
1 can tomato sauce
1 can whole stewed tomatoes
1 cup mushrooms
1 cup green bell pepper
1 tsp basil
1 tsp oregano
1 tsp black pepper
1 tsp salt
3 bay leaves
2 tablespoons soy or Worcestershire sauce
Garlic- optional, add to suite taste
8 oz spaghetti

Chop the onion and heat whatever type of oil you prefer, I use olive oil. Saute the onion, then add the burger, stirring and browning the meat. Slice and add the peppers. Slice mushrooms in large pieces, I prefer to break them into thirds. Add mushrooms, then the tomato sauce and stewed tomatoes. Add spices, garlic if desired, cover and simmer on low heat for at least two hours. Cook spaghetti, a serving is about two ounces dry pasta per person. Drain and serve hot with gameburger sauce. Serves four.

This recipe is a modified version of a caribou recipe from “Cooking Alaskan.” It works great with venison.
